If using a pan on the stove, it should be deep enough to allow a couple of inches of head room to keep rice from boiling over.

You will need a type of healthy fat such as butter, coconut oil, or olive oil. It keeps the rice soft and keeps it from sticking together.

Clarified butter or Ghee is a good choice and a very traditional ingredient to use in this dish.

To rinse the rice, measure and pour your rice into a colander or large bowl and add water to ice above the rice.

Swirl the rice around in the bowl with your hand until the water turns milky (resembling coconut milk or rice milk).

Carefully pour out the water, being careful not to lose any rice down the sink.

Repeat this process 3-4 times until the water remains clear when you swish. Drain off the water, and you’re ready to start cooking!

Sauté the vegetables and aromatics in butter or oil until golden brown.

  • 2 tbsp unsalted butter, Ghee, or coconut oil
  • 1/2 medium onion finely chopped
  • 4 cloves of garlic, minced
  • 1 tsp turmeric
  • 2 cups basmati rice or your choice of rice, rinsed and drained
  • 3 cups chicken stock or vegetable stock
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • Serve with chicken, beef, or seafood, grilled veggies, and bread.


  1. Heat the butter or oil over medium heat until melted. Add onions and garlic to the pan and saute for 2 to 3 minutes until the onions turn translucent.
  2. Add the turmeric and mix well until all the rice is evenly coated. It will look a little dark, but don't worry. It will lighten up when you add the liquid.
  3. Add the stock, salt, and pepper, and stir to combine. Bring the mixture to a boil, cover, and reduce heat and let it simmer for 15 minutes.
  4. After 15 minutes, remove the pan from heat, and set it aside for 5 minutes. Remove the lid and fluff with a fork. Enjoy!
